I am thinking about taking the e-Learning courses available for the SAS Certified Data Scientist certifications in
Data Curation
Advanced Analytics
AI & Machine Learning
However, I am not sure about the content of the courses. Do they cover very SAS specific content or are they more general introductions into the topics? If you know something about this thank you in advance!

so far I have taken the first two of the AI & Machine Learning exams. I would describe them as "how machine learning is done with SAS". They do cover general topics and show how they are realized in SAS. Therefore I wouldn't call them general introductions.

In addition to this excellent advice to use the Content Guides, note that you don't need to take all 3 levels in order to earn the Data Scientist credential.
Basically, every candidate must take and pass the Data Curation exam. The prep for that exam is contained in the Data Curation level of 4 classes to prepare you for that exam. Then you choose which of the Analytic levels you want to pursue. The Advanced Analytics level has 9 classes and 3 exams to earn that credential. The AI&ML level has 5 classes and 3 exams to earn that credential. But you don't need to do both analytic credentials. You just need to pick one level.
The Advanced Analytics level focuses on SAS/STAT coding and on using SAS Enterprise Miner. The AI&ML level focuses on SAS Viya and the Visual Statistics tools for AI&ML.So we recommend choosing the Analytic level to study based on the software you need to/want to use.
