IS THERE A WAY TO WORK WITH SAS WITHOUT HAVING A SERVER CONNECTION?

Since you haven't fully mentioned the issue you are facing with server connection. I assume you are just exploring the option of Local SAS.
SAS Can be installed directly on your laptop/server and you can invoke it without having to make a server connection as you have to do in SAS Enterprise Guide/SAS Studio.

Kindly note you will have to request for SAS Software depot and license from your account rep. if you don't have it already.

what happens is that I'm counting on SAS EG at my work
but I'd like to practice at home... but when I try to use SAS EG
sample ->no profile selected
how I could set it up to have a server I don't count on

Are you using same machine for work and practice at home?
Are you using your work server to connect for practice as well?
If answer to both the questions above are yes,
Then EG should load your saved profile to connect.
However, if you would like to practice outside of your work environment, as I have mentioned earlier you will need to have a license for BASE/SAS and EG to install on your laptop. If you would like to use a free version of SAS, as suggested by @Kurt_Bremser you can download the SAS University Edition. However it doesn't come with EG, instead it has its on UI.

There's two ways:
- Have a SAS installation on your local computer. Needs a license, and, if use with EG is also licensed, you can use EG with the "Local" pseudo-server. Otherwise you have to use the older Display Manager interface.
- Download SAS University Edition and use that. UE is in fact a complete mini-server packed into a virtual machine, but does work without any outside connection.

If you are practising at home and you have no way of connecting to your company's SAS servers (check with them regarding remote access) then SAS University Edition is your best option.
