Can anyone recommend some good learning materials (books, videos, articles etc) on Generalized Linear Model fitting in SAS (Proc GLM, Proc Genmod etc)?

I recommend SAS for Linear Models, Fourth Edition by Littell, Stroup, and Freund. The book's web page includes a link to theTable of Contents so you can see it it suits your needs.
