if the (drop=variable) statement is used in the data statement with 3 data sets, but i say to drop the same variable in all 3, can it still be used in calculations?

Can you post some code you've tried and an example of using the (drop=variable) option (not statement)? It is hard to understand your question without an example.

I agree with @Cynthia_sas that posting your code would be a good idea.  But your question is also easily answered by trial and error - usually more effective that getting answers from others.

The hash OUTPUT method will overwrite a SAS data set, but not append. That can be costly. Consider voting for Add a HASH object method which would append a hash object to an existing SAS data set

Would enabling PROC SORT to simultaneously output multiple datasets be useful? Then vote for
Allow PROC SORT to output multiple datasets

It depends on where and how you specified it. So Yes and No.
