Recently, to resolve issues that I have encountered with Viya 3.5, I have had to add multiple entries into the logging.level definition, to generate debugging information in various logs. After the issues were resolved I had to set the logging level for each new configuration item to OFF. I was surprised to discover that there was no way to delete the items. This seems like a needed feature, the ability to delete configuration items in general, if not from the logging.level specifically.
