Can anyone tell me briefly about the output from proc STDRATE when using the GAMMA method. How do the methods and results compare to the methods and results produced when using the Inverse Gamma function. I am performing age standardized rate calculations with 95% CI calculations.

 I know this is a bit obtuse, but my background is general application development as opposed to statistics.

Gamma refers to the calculation for the CI not the rate. Though it's only applicable when you select a method = DIRECT or MH.

The SAS documentation contains 2 links to papers that detail how the Gamma method is calculated. Here's one below:
