These are the trains that go between terminals in the airport. They will not take you to Disney or the SASGF.
That's correct. For most airlines you have to take these trains to get from the gates to the baggage claim area (or from TSA/security to the gates on the way home)
Once you have your baggage you have lots of choices to get to Disney and SASGF - shuttles, taxis, rental cars, uber or my personal favorite hopefully a family member will pick me up 🙂

I recommend scheduling a shuttle (not the new shuttles in the airport obviously) in advance if you can especially for going home. The shuttles are the most economical usually but often if you just show up that queue line is a longer wait. This also the prime time of year for spring break, so more than likely MCO (Orlando) wil be crazy busy unless you are arriving really early or really late.
Taxis can also be pricey if you are not with a group where you can share the fare.
With Uber you risk the surcharge if the demand is really high (which is likely, again because of the time of year).

Also, Alamo and National car rentals have a location in the Dolphin hotel. There are times I've found it cheaper to rent a car for pickup at the airport (MCO) and drive to the Dolphin and drop it off. This also gives you the flexibility of stopping by a store for snacks, water, sunscreen, etc.
Be aware that the Swan and Dolphin charge to park, so when you get there, inform them you are dropping off the rental car so they don't charge you.

@ChrisHemedinger somebody (me) who was told that was the best way to go to Kennedy Space Center! (my side trip before heading to the Swalphin.)
