two questions: how to set up in EG and display current mappings. I looked in help and this forum and could not find any references

There are no tool/wizard that will help you create/modify constraints. You have to do it with your own code.
EG also lacks of a data model viewer/browser that will help you see your relationships. The only way to see your constraints is to use Data Set Attributes task.
