Hello,
I would like to do something as basic as creating a new character string variable using the SAS query builder wizard. Before, I would just create a variable using a data step within a program node, however in this particular case it would be beneficial to use the "query builder".
So far, the only options I see are to either re-define an existing variable within the available tables, or create an advanced expression using these existing variables. How does one go about creating a new variable?

Not sure, may be case statement will do the job.
You create a new variable with the advanced expression and you can use whatever expression you want. Whatever you add as advanced expression will then be on the left side of the generated SQL select statement.
<your advanced expression> <attributes> as <column name given>
