How/Where can i find a list of all the APIs that SAS 360 match exposes?
SAS API 360 match exposes several or many (i'm not sure) APIs that are not being mentioned in the API docs. 

for instance I'm able to delete campaign with a delete request. however, the docs don't mention that.

Note:
I don't have any specific result that i want to achieve. I just want to explore the API and see if i can automate some of out processes.

Documentation for the ad server request APIs is available from support.sas.com.  API documentation for managing configuration is available from within the application itself only.

I am familiar with the documentation you mentioned, yet i couldn't find there either in the documentation and in the ad server interface the endpoints that i can reach manually.

A great example would be:
https://{the name of the instance}.aimatch.com/currencies/base.xml

this api endpoint is available and works but is not being mentioned anywhere.
Hence I wonder what other endpoints are available and not being mentioned.

Supported APIs are documented, and that includes APIs for currency management.  The example you give is an oversight and an update will be made to provide an API documentation update for it.
