TABULATE is supposed to behave the same regardless of the hardware platform and operating system.
To suppress class headings, assign an empty label, e.g.:

proc tabulate data=sashelp.class;
class sex age;
var height;
table sex, age=""*height*(mean median);
run;
[/pre]
Things get a little trickier with row headings. By default TABULATE will render an empty heading cell rather than tossing the cell. If you want to toss the cell, use the ROW=FLOAT TABLE statement option, e.g:

proc tabulate data=sashelp.class;
class sex age;
var height;
table sex="", age=""*height*(mean median)/row=float;
run;
[/pre]
