how do we know which SAS products installed in my company servers , what are their version are these latest or not , if not then how we can upgrade to latest version

You can use PROC PRODUCT_STATUS to determine the version of the SAS products installed on your server.  

Updates to SAS in a corporate environment normally are implemented by the IT department in concert with the company's SAS Administrator.

Could you please elaborate steps how to check this PROC_STATUS , with some screenshots, if this SAS application was installed and customization (workflows etc) by our SAS consultant (by vendor) then is it good to be upgrade from them or still you recommend our IT department

If you're talking about an application built on top of the SAS system, this has to be determined with the creator of the application.
