what is usual log files need to rename after stopping the SAS services ?
e.g. We create folder for Lev1/Web/WebAppServer/SASServer2_1/logs and move all log to that .

Normally, I don't think it is necessary to archive web SAS Server logs after a restart. I usually just delete old logs and that is a lot easier to do than archiving into a folder.

It's up to you how much log history you keep. I tend to delete any log files older than 6 months. However you may have good reasons to retain some logs for longer like metadata server logs so you can track accesses. I can't give you a list of logs as it varies with where you have installed your SAS software, what products you have and what version you have. You could build a script for deleting old files if you prefer an automated approach.

In a typical organization, there are policies for log retention/archiving. If there is none, then create a policy, document it and follow it.
