I am Trying to figure out the best way to get my data from the 3 SAS drives until my new server gets here in 2 weeks? what is the best course of action to rip out the data I need to get to from those Drives?

What OS and SAS version are you going from and going to? If they are both the same then a simple folder copy may be all you need. It gets more complicated if you are changing OS and/or SAS version.
