Installing Viya 4 and want to use ACME Certificate Manager for user SSL's instead of third party vendors like DigiCert or GoDaddy. Has anyone else done this as alternative way of generating certificates for users accessing the ingress?

You would need to create a new cert-manager Issuer that uses the ACME process:
https://cert-manager.io/docs/configuration/acme/
Then specify it as the issuer in the cert-manager-provided-ingress-certificate.yaml example found in $deploy/sas-bases/examples/security. There is a README.md file in that path too that talks more about that file.
