Does someone knows the best way to do forecast using Enterprise guide for Retails Environnement? Especially in Telecommunication?

That's a bit of a vague question. Forecast can mean a variety of things, assuming it's time series and you have SAS/ETS licensed I would first look at the SAS/ETS manual.  What does your data look like, what type of variables, what are you trying to predict?

I do have SAS/ETS licence, I began to go through the manual, I have data including, sales, activations, footprint, competition, city, provinces, products...I want to forecast bottom/up and set targets. I use to do all of this in Excel, but would like to move on SAS. data is too heavy and need to improve.
