If I understand your requirement correctly - the standard way of doing this is to feed your log table into a Loop transform, so you can use the log columns values as macro varibls within the loop, e.g. for filtering.

Hello, I have a list(table) with logs and I'd like to get the date of last data extraction out of it. And then based on this, run another extraction in SAS DI. How to solve it?

Could someone please tell me where I can find materials related to incremental data extraction in sas?
